Triple chocolate cake

Our 3rd Wedding Anniversary

Happy 3rd Wedding Anniversary, Hubby! Love you! Haha!

My hubby likes chocolate cake so I came across the following recipe and decided to bake the cake for us on this very day. Time flies and we are married for 3 years. Many more years to go. :X

I simply bake the cake according to the recipe and top it up with some melted white chocolate as decor and dark chocolate ganache.

A simple chocolate cake

Recipe adapted from here

2 cups sugar
1 & 3/4 cups all purpose flour
1 & 1/2 teaspoons baking powder
1 & 1/2 teaspoons baking soda
1 teaspoon salt
3/4 cup Hershey’s Cocoa or Hershey’s Special Dark Cocoa

2 eggs
1 cup milk (I use buttermilk)
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

Heat oven to 350°F. Grease and flour two 9-inch round pans or one 13x9x2-inch baking pan.

Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.

Add eggs, milk, oil and vanilla; beat on medium speed of electric mixer 2 minutes. Stir in boiling water (batter will be thin).

Pour batter into prepared pans.

Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. (Cake may be left in rectangular pan, if desired.)

Chocolate overload - very moist

kbakesology101: This cake is really easy to make. Though it seems intimidating to add boiling water to the batter, but you’re assured that the cake turned out moist and full of chocolately taste! This recipe is definitely a keeper from now on. Well, probably because I don’t need to use a mixer in this case…. Yes! You can simply mix the batter with a WHISK! Easy peasy! Have fun trying! 😛

I’ll update my bread-baking-adventure tomorrow. 🙂
